Are those amounts active surfactant percentage or actual product?
How much sorbic acid are you using? That may be the problem.
Can you use SLES?

What is BAPD?
As mentioned by @ketchito that much BTAC would not feel good specially in straight hair.
Have you tested that how does it feel after like 10 use?
For my hair even 1% is heavy.
For stability I don’t think you would need another surfactant. Just BTAC and fatty alcohol is enough for LGN. And keep the ratio between 1:4-1-6?

SLS or sulfosuccinate but it depends on for what purpose are you using that second anionic surfactant.

I don’t have experience with such thing but a long time ago i once mixed i think pq10, EDTA and SLES and the color turned pink after a few minutes. I then made another batch with adding CAPB after pq10 and it had no problem.
So my suggestion is use some CAPB or a nonionic surfactant after your cationic thing and see if the problem is solved.

Yes it is. I would use it at 0.5%. i would also add 0.4% allantoin and remove everything else other than preservative.
You should also first see what is causing th itch.

Reduce pH to 4-5 and mix
Viscosity should increase a bit
Then add CAPB and then other ingredients

So if it is c12 chain in CAPB, does it mean any other surfactant with mostly c12 will cause the same? For example polyglyceryl 4 laurate.
Does c12 feed p. Acne or any other bacteria?

What is the pH of 1% guar gum solution?
If it is below 7, this type needa high shear mixing and after 15 minutes it will hydrate.
If it is 8-10 then mix in water very easily before reducing pH.

Is this your question that how can they add oils without emulsifier?
They have a lot of surfactants and surfactants are emulsifiers.

Why are you not using a thickener like HEC?
It would be much better for both viscosity and stability than adding another surfactant.

Does glutamates reduce the overall viscosity or shifts the salt curve to right?
How does viscosity decreasing compare to sulfosuccinate? Is it equal, less or more?
How does foam and cleaning power of glutamate and sarcosinate compare to sulfosuccinate as a secondary anionic surfactant?
