    HI, I am creating a non-alcoholic flower essence product in Australia. Although taken orally, in Australia flower essences are not classified as food (as they are in the USA ) but need to comply with cosmetic guidelines, hence my asking this forum for advice. Traditionally they are made with 15% to 24% alcohol by volume as a preservative and have a shelf life of 3+ years, but can also be made with cider vinegar or vegetable glycerine instead. For taste I have chosen the glycerine, but am finding it very hard to work out what percentage I need to use and the consequent shelf life of my product. Can anyone advise what shelf life I could expect for 50%, 60% and 80% glycerine respectively, with the rest being spring water infused with flower essence? The 80% is a nighmare as it is so thick and gloopy, 50% is my ideal but I can’t have a less than 12 month shelf life. Many thanks!

    I think you are going to have to make them in different concentrations and wait and see.
