You also missed your preservative and antioxidant. I am not much of a butter formulator but i think its your formula that needs adjusting and that could be a bunch of different things. I would keep the oils under 15% and you may also need a gum/polymer as well. I’d say start with making a 1 gallon batch again, go over your numbers and ensure everything adds up correctly before scaling. You can also check out knowde for a base formula and work your way from there.

We manufacture the hydrosols in house and have the ability to use both preserved and unpreserved.

It will only have the hydrosols and preservative. Just the hydrosols range from 4.8 to 5.9.

I am noticing all on the market use sodium benzoate and potassium sorbate.

This is a tough one then because I was hoping not to use one that has formaldehyde.
