    Is this a sign of instability - or is it “only” air in the sample?

    From the top it looks fine.

    You need to upload the picture to some hosting service (like Flickr).  Then link the address to the picture.

    I’ll try to add a plugin that let’s you add pictures directly.

    that looks like the product’s been filled cold, and the non-fluid nature of the product (hence, uneven filling) has led to air cavities being formed

    I should also have mentioned that the left one was stored @ 40C for a month- the right one @RT 1 month. The bubbles were not possible to see directly after filling (or were very small) - they kind of “grew” after a while - that is why I was considering emulsion instability.
