Lecithin: Soy vs. Sunflower in lotions/creams
People,
I saw soy lecithin and sunflower lecithin in a grocery store recently.Does anyone know if there would be a difference in formulating with sunflower instead of soy lecithin?I have looked on Wikipedia and I do not see anything there which would indicate that either would have an advantage over the other when it comes to lotions/creams. -

This article is helpful there is a breakdown of the components of the two in there. The difference is in the fatty acid profile, it appears that they are close but the sunflower has a higher content of diunsaturated fatty acid whereas the soybean oil has a higher content of triunsaturated fatty acid.
