  • Why does my emulsion resemble honeycomb?

    Hello everyone, I made a basic emulsion and left it in a sealed container for a few days. I went back and it looks like honeycomb! What’s going on? Any ideas? Thanks, Gaby

    Gaby,you experienced small imbedded air pockets rising to the surface of the product. Keep air entrainment to a minimum next time while mixing - I normally use a spatula fixed with a c-clamp as a baffle inside my beaker for this purpose.

    @chemicalmatt Baffles reduce air entrapment? (If you have the time, could you explain how that works?)
    Edit: entrainment* It happens when the surface of the vortex meets the impeller blades. Baffles cause a change in flow patterns resulting in more top to bottom mixing and less air entrainment.

    Thanks guys. I really want to buy a proper mixing machine, but I am baffled (sorry for the pun!) by the range out there. Could somebody please suggest a proper mixing machine for up to 5kg at a time?
