  offsetting Evaporation

  I’ve added 5% of extra water to our emulsion and not sure if that’s enough to offset evaporation (using an overhead mixer so can’t cover with a watch glass).

  Is there a formula to calculated the amount of extra water needed?

  Maybe you can heat it to allow the emulsifier to melt itself,
  top it off with water as needed
  then stop heating while mixing it to emulsify
  as to reduce further evaporation?

  And cold emulsifiers too.
