  • Chart for exponential increase in efficiency of organic acids with lower pH.

The other day…I was somewhere on ULP, and saw a chart that showed the exponential increase in efficacy of organic acids as preservatives as pH was lowered.  Now I am kicking myself for not taking a screen shot.

I work with a lot of beginners…and I need to have that slide in my arsenal.  So many times the mfg’s are including a range that is going way up to almost neutral, all the while knowing the product will just barely function in that range. :(

If someone remembers or has that slide…I would love the link.

It was very easy to read, understand…and make your jaw hit the floor.

    Aloha.

I have set my Windows calculator to ‘scientific’… comes with the ‘log’ function (though estimating based on pka vs. pH works good enough for me). *Cough-cough*

I need something….for someone with a little less knowledge. :)

    Total side bar:

Came across this…. Efficacy of Several Organic Acids Against Molds - ScienceDirect

Not what I was looking for…but begged me to ask….it looks like preservatives are not using the most efficient organic acid.  Is this because the good ones….aren’t skin tolerant….or GRAS?

i couldn’t find anything comparing different acids but some suppliers have charts like you’re describing for their individual preservatives
