Literature suggestions on Ascorbic Acid/Vitamin C oxidation
Hi guys! I’m doing some research on ascorbic acid/vitamin C oxidation. Does anyone have any suggestions in the literature to share?
When I search I hardly find content about the oxidation of the acid itself and when I do I’m a little bit afraid to be trusting in studies that aren’t very reliable (or are outdated), so I’m asking you because you have more experience than me on this topic (I’m not a chemist ).
