    I have a thick cream formula I’m working with that contains 1% AVC. As soon as I start homogenizing the oil and water phases it becomes extremely thick and I can no longer homogenize effectively. My dynamic mini pro mixer just doesnt have the power I guess, even in a small 300g batch. 

    I know it’s the AVC making it thick, because when I instead use 1% Sepinov EMT 10 it is not nearly as thick and i can still homogenize. And I dont want to use less AVC. 

    So i’m wondering what I can do here, as i’d like to be able to homogenize it if possible and not just mix. Although it seems to have turned out fine with just mixing…

    Are there certain formulas that are just too thick to homogenize no matter what? Do i have one of those formulas here?

    Or do I just need to do bigger batches with a giant silverson mixer?

    Is the Aristo AVC…your only emulsifier/gelling agent?

    If so… use your Kitchenaide Mixer.  :D

    No, it’s not my only emulsifier. I got some montanov, GSC and carbomer in there too. But i love the feeling of the AVC. The formula is perfect, might be my favorite thing ive ever made, so i dont want to change anything.

    i can mix it just fine with my overhead mixer…i just cant homogenize it. It’s probably not necessary i suppose, it just makes me feel better about things when i know it has been homogenized.

    I’ve been thinking of getting one of those kitchenaid mixers for thick stuff like this. Are they pretty good about not introducing air while mixing? Maybe it depends on the type of mixing attachment you use with it?

    @GeorgeBenson Most of the air in an emulsionis introduced while it’s liquid. Since yours gets thick very fast, you don’t need to worry much. Btw, are you keeping the temperature high and constante throughout the emulsion process?

    Aristoflex AVC is a pre-neutralized, which means that it should be processed gently. It can be homogenized for a short time at the lowest speed for better spreadability in the emulsion. You’d better use mixer instead.

    @ketchito i just let it cool on its own while mixing, i dont keep it heated after the phases are combined. I usually mix fast for the first couple of minutes and then start mixing slower all the way down to room temp.

    So it sounds like i dont have to worry about homogenizing it? that is good to hear.
