  DMDM hydantoin has 8% nitrogen
  Diazolidinyl Urea has 20% nitrogen
  Imidazolidinyl urea has 27% nitrogen

  what is this nitrogen content in formaldehyde donors that are even written in COAs of product?

  You simply have to look at the molecular formulas/structures of the ingredients for your answer.

  DMDM Hydantoin - C7H12N2O4
  Diazolidinyl Urea - C8H14N4O7
  Imidazolidinyl Urea - C11H16N8O8

  What is special about nitrogen that they are mentioned in COA? 

  I mean why they don’t mention carbon or hydrogen but only nitrogen?
