    I am looking for a chart that shows at what temperature various starches will become soluble in water.

    I am particularly interested in comparing arrowroot with rice starch.  As I do not want the starch to solubilize, I need to know what available working temps I would have with each starch type.

    I believe rice starch is 90C.  Not sure about some of the others.

    I am making an emulsified deo cream, and the working temp is running in the 80-85C range.

    Has anyone come across Taro (Colocasia esculenta) starch?

    A cursory glance….and I only find the flour.

    (Even ULP just went….Huh???)  :D
