  Sodium Citrate increase or decrease the pH

  Citric acid decrease the pH.
  What does Sodium Citrate do? Increase the pH or decrease it?

  Trisodium citrate is alkaline, it will increase pH.

  @Pharma what about di and mono sodium citrate? 
  Which one is better to increase the pH of products?

  Monosodium citrate is acidic, disodium citrate is slightly acidic. Meaning only trisodium citrate will increase pH (obviously, this depends on the starting pH).

  Around 7.5-9 at most, depends on what else is in your product and how much you add.
