A little while back I made some 12% concentration, potassium glycyrrhizate by reacting the 95% pure acid with high purity KOH. I left it in the refri for a day and it was fine. Then I thought, maybe I should preserve it. So I added 0.8% dehydroacetic acid. It was the first one on the shelf. Maybe I should have thought it through, because now, a couple of weeks later, I tried to use it and it had thrown a cloudy precipitate. Appears to be the acid form again, which is only 0.2% soluble.
I have been thinking about this for a few days and I can only come to the conclusion that the preservative acted as a reducing agent; another reaction took place.
