    Hi,
    I am trying to make a cream with 5% MAP (Magnesium Ascorbyl Phosphate).  I am using Olivem 1000 (8% for thickening) for Emulsifier and Shea Butter (5%) for Lipid.
    When I dissolve my MAP in the water it won’t emulsify.  If everything is the same and I remove the MAP it emulsifies just fine.  
    Any solution for this issue?
    I tried using 60% of the water for dissolving the MAP and adding it after the emulsion is formed, but then after a few hours some liquid comes out of the emulsified cream.

    I believe people have commented before on this forum about the difficulties of using that emulsifier.

    MAP isn’t easy to work with. It also reduces viscosity of polymers. I think you should change an emulsifier.

    You’ll need a co-emulsifier for Olivem 1000.  It does not yield stable emulsions as a solo emulsifier.  Add Glyceryl Stearate at 2%.

    MAP should not be added at temperatures much above 40C, so best you add it it at cool down.

    Hi,
    Thanks for the suggestions, I ended up changing my Emulsifier, then it seemed to work just fine.  
    I read MAP is stable for 20 hours at 80C so adding it to water phase before cool down shouldn’t be a problem.  Anyway, It works both ways, I tried it each way after changing the Emulsifier.
