How to use EasyMix Velvet emulsifier and stabiliser?
Does anyone have tips or experience how to use EasyMix velvet? It doesn’t really say on Gracefruits web page. All it says it that you add it and stir, and you will have a gel or cream using 0.5-3% at a wide pH range.
I am making a gel-cream (O/W with ~17% oils) so need to add warm to be able to melt butters. Should I just pot and heat and slowly add the Easy Mix? What % to aim for? When to add it? At what temperature etc?
Really grateful for any help!
