    is there any real difference between sorbitan stearate, glyceryl stearate, sorbitan olivate, peg stearate and all these solid low hlb emulsifiers???? can someone educate me on when to use each? I always choose glyceryl stearate bc its the cheapest when I need to emulsify oils

    @natiyo123 as short answer the main difference in hlb value and even in the final texture try to Google it, it is easy to get more details.

    I have read the data sheets, of most of them. They seem very similar to each other, except price. Thats why Im asking.

    As @Fekher mentioned, the main difference should be the HLB value. For instance, if your PEG stearate is PEG-100 stearate, that one has a higher HLB than the rest, and works better for a different type of emulsion (although, it could also be paired with one of the low HLB emulsifiers for improved stability).
