    I have a holder that keeps it in place at an angle in my product, hands-free, and it’s also easy to operate and move around by hand.  It’s the giant-sized, heavy duty, commercial version of a handheld stick blender.

    It has capacity to mix up to 50 gallons at 18,000 rpm.  Laboratory high shear mixers seem to top out at 21,000 rpm and cost many time as much, and because of the way they’re oriented on a stand seem to offer less flexibility of use.

    Is there a reason I’m not seeing to invest in a laboratory high shear mixer for making o/w emulsions?
