Antimicrobial effects of sorbic and benzoic acid at high pH
I recall reading that although the effect on bacteria of benzoic and sorbic acid is severely impacted at pHs above 5/6, their anti-fungal/yeast effects are still at least somewhat, if not fully, present. Is this the case? I am considering hydroxyacetophenone as a replacer for these two organic acids if their anti-fungal effects also decreases at higher pHs.
