About Self-emulsifying unstable W/O/W emulsions

i want to make a double phase oil&water emulsion but i want to mix when i shake it with my hand force so this mixing should be not so stable emulsion when it is waiting on shelf.
what kind advise do you give it to me about it?

Just out of curiosity, are you first marina a W/O (with the corresponding type pf emulsifiers), and then adding this to an O/W emulsion?

Yes.At first i make W/O emulsion and then o/w mix add to phase 1 under the low shear.

I make self-microemulsifying O/W microemulsions, but I haven’t tried making W/O/W emusions yet. However, from what little I’ve read, their formation requires a threshold shear force (which you can calculate). It sounds like you need to rupture the droplet in the second emulsification step, usually via high pressure homogenation. It sounds like you’re trying to supply this force via shaking? Some newer methods describe requiring lower shear forces in the second emulsification step. It’d be neat if you could build a device to supply this shear force into your bottle, though it’d probably require some innovation and experimentation and would drastically increase your packaging costs. Are you following the methods in any particular publication?

If you want to create a W/O/W by shaking, you need to apply same principles as for a bi-phasic product. Which solubilizer are you using in the water phase of your second emulsión? Also, you need some salt also in the water phase.

actually i havent yet made a decision.
İ think at first step i ‘ll make w/o step with Polysorbate-20 ( lipophilic emusifier) and then i will add hydrophilic emulsfier on second step…
actually i want to make a water based solution serum with antiaging actives with a lotion its above.
When you shake it it must be mixed emulsion as a light lotion with water phase and its above lotion creamy phase instantly.

Polysorbate-20 is not a lipophilic emulsifier. I advise you to check on some similar products on the market, patents and some books to understand how to make that type of emulsions. To me, multiple emulsions don’t have a very different feeling than conventional emulsions, but they would help you for instance, protect sensitive ingredientes from oxidation.
