Phase choice for emulsifier……. Water vs oil….and water droplet size result.
More often than not…I am using either Montanov L or 202 plus 165 and GSC. Per many conversations…and time viewing mfg process literature, adding the Montanov product to the water phase has become my modus operandi. (The 165 and GSC in the lipid phase.)
So today I was watching some propaganda on an emulsifier that someone mentioned to me…. and they had an interesting video (linked) that offered 6 choices of process….of which one included adding to the water phase.
Then they did something I do not do…and viewed it under the microscope….and this is where it became fascinating ….(if you don’t want to watch the whole video…go to about the 5:30 mark…for microscope slides) when the emulsifier was added to the water phase… the water droplet size was not nearly as small…. but they did still consider it stable.
I am the kind of person….that might not be able to sleep…if I did not think my water droplets were not all equal sized, spaced in a covidesque equidistant spacing matrix.
So, if I were to look at my Montanov and 165/GSC hybrid system….have I also not optimized my droplet size? (By placing the Montanov in the water phase.) I am guessing lamellar networks are going to come into play?
