Another wasted batch
Hi just wanted to follow up on a recent post regarding a cream I am making. My post of Feb 9th was regarding big issues I am having in getting the cream consistency I desire. My product is varying wildly from a smooth “silky” cream to a bowl of mashed potatoes ( at least it has no lumps!) Lately it has been coming up mashed potatoes all the time. I got a lot of interesting responses and I tried buying a brand new immersion blender to see if perhaps the motor was getting skunked on the old one. Anyway the latest batch is potatoes in spite of the fact that I tried to follow the advice of ChemicalMatt. I mixed the phases at 75C homgenized at max speed for 15 min. began jacket cooling and tried to switch to a large low speed mixing motor with a large head that could effectively move the whole batch ( about 12kg) This was a disaster. The batch began to separate into oil and solid phases immediately. I knew this was a mess so I removed the low speed mixer and re-installed the homogenizer and continued blending until it could not move the batch effectively. The low speed mixer was reinstalled but now the viscosity was way too high and it could not move anything. I heroically hand paddled it and added my dimethicone ingredient at about 51C. It is cooling slowly but it looks like another batch of taters. Any other insights would be very helpful. Thanks
