Foam in final product
Hi All!
I have a formula that uses Olivem1000 as the emulsifier. Its a very stable formula so long as the temps are kept stable during the heating process.
My issue is the foam. I generally make batches in a minimum of 1500 grams. I use a Kitchen Aid stick blender. I ALWAYS get a lot of foam on top of my final product. Some of the foam pours off into my jars, even after scooping foam off top of the final product. I have not been able to figure out how to avoid these air bubbles. I end up losing product when scooping off the foam. Does anyone have any suggestions? I thank you in advance!
