  • Confused if Centrifuge was Pass or Fail - White frothy layer on top

    We have created 3 emulsions:

    1. Hydrogenated lecithin at 1%, and Xanthan Gum at 0.4% - with non-sticky and beautiful texture

    2. Heliofeel 22 2%, Xanthan Gum X34 0.3%

    3. Heliofeel 22 1.5%, Xanthan Gum X34 0.3%

    All have beautiful texture and are non sticky.

    However, when we did centrifuge test, the emulsion looked stable except for some white frothy material on top. Please check these picture. Could these be bubbles formed in emulsification - what do you think? Can we consider this as Pass or Fail? Plese guide.

    And if these are bubbles, then how to avoid the formation of this during emulsification?
