Sclerotium gum ph stability
Hi,
I made a formulation that has succinic acid at 1.5% and ethyl ascorbic acid at 1% with a ph 4.3. We added amigum 0.3% in the end and there was no gelling whatsoever. I seen conflicting data about amigum some say its stable from 5 to 9 ph, others say 3 to 9. Any idea what’s going on?
