  Impeller to Tank ratio advice

  I have gotten SO many different answers on this question, so I thought I’d see how folks in here would weigh in. I am producing about 8 gallons of body cream in a 14″ diameter pot. I have had two chemists tell me to get a 2″ propeller, but I’ve also heard suggested ratios of 1:3, 1:5, and 1:10. These are wildly different answers, so I can’t make a decision.
  This will be my first time using an overhead mixer, so I’m a rookie on this subject. Any help is appreciated. Thanks.
