  • Role of fatty alcohol in emulsion stabilization

    To stabilize an emulsion, oil soluble stabilizer like fatty alcohol and water soluble stabilizer like carbomer or xanthan gum is used. Water soluble stabilizers increase the viscosity of water face and prevent the rise of dispersed particles to the surface of an emulsion and prevent creaming.
    Question is: what does fatty alcohols do that stabilizes the emulsion?
