I’m wanting to use an anionic emulsifier system which consists of:
POTASSIUM OLIVOYL HYDROLYZED OAT PROTEIN, CETEARYL ALCOHOL, GLYCERYL OLEATE, GLYCERYL STEARATE, AQUA

my question is, how much salt is too much to cause stability problems? Say I wanted to use 2% sodium hyaluronate and 0.5% sodium benzoate… how is one to know if/when the salt line has been crossed?
    Thank you!

You would probably see the emulsion separate if you’ve put in too much salt.
